Application of thermal sterilization regimes simulation for improvement of canned foods quality factors

Results of comparison of optimization methods of thermal sterilization temperature-time regimes have been described. It has been shown that due to simulation the final canned foods’ quality factors are significantly improved, sterilization process time is decreased and energy consumption is reduced without sacrificing actual final lethality value

Preparatory selection of sterilization regime for canned Natural Atlantic Mackerel with oil based on developed mathematical models of the process

Definition of preparatory parameters for sterilization regime of canned "Natural Atlantic Mackerel with Oil" is the aim of current study. PRSC software developed at the department of automation and computer engineering is used for preparatory selection. To determine the parameters of process model, in laboratory autoclave AVK-30M the pre-trial process of sterilization and cooling in water with backpressure of canned "Natural Atlantic Mackerel with Oil" in can N 3 has been performed. Gathering information about the temperature in the autoclave sterilization chamber and the can with product has been carried out using Ellab TrackSense PRO loggers. Due to the obtained information three transfer functions for the product model have been identified: in the least heated area of autoclave, the average heated and the most heated. In PRSC programme temporary temperature dependences in the sterilization chamber have been built using this information. The model of sterilization process of canned "Natural Atlantic Mackerel with Oil" has been received after the pre-trial process. Then in the automatic mode the sterilization regime of canned "Natural Atlantic Mackerel with Oil" has been selected using the value of actual effect close to normative sterilizing effect (5.9 conditional minutes). Furthermore, in this study step-mode sterilization of canned "Natural Atlantic Mackerel with Oil" has been selected. Utilization of step-mode sterilization with the maximum temperature equal to 125 °C in the sterilization chamber allows reduce process duration by 10 %. However, the application of this regime in practice requires additional research. Using the described approach based on the developed mathematical models of the process allows receive optimal step and variable canned food sterilization regimes with high energy efficiency and product quality.

Temperature field investigation of the industrial autoclave ASCAMAT-230

Heterogeneity of the temperature field in the sterilization chambers of industrial autoclaves during heating and cooling phase is one of the problems in the development of new regime for product heat treatment on the preliminary selection and laboratory testing stages. This is the reason of studying the temperature field of the industrial autoclave ASCAMAT-230. The autoclave ASCAMAT-230 is a vertical autoclave of 230 liters capacity heated by three tubular electric heaters. Determination of temperature field parameters has been carried out according to the method for studying the temperature field of periodic devices' heating medium for sterilizing canned food. Six Thermochron iButton temperature loggers have been used to measure the temperatures in the sterilization chamber of the ASCAMAT-230 autoclave. Logger 1 has been put in the place of the standard thermometer installation, loggers 2 and 3, 5 and 6 – in the center and on periphery of the lower and upper parts of the autoclave respectively, logger 4 – in the center of the middle part of the autoclave's sterilization chamber. Temperature measurement in cans with the product has been carried out by temperature loggers from the Ellab TrackSense PRO complex. The loggers have been installed in two cans with homogeneous product located in the upper and lower parts of the autoclave. The time temperature dependences for the entire sterilization process, as well as for the heating and cooling stages have been constructed according to the acquired information. Based on these data conclusions about the uniformity of the temperature field inside the sterilization chamber of the autoclave ASCAMAT-230 during the heating, sterilization and cooling stages have been developed. Some recommendations for using the autoclave ASCAMAT-230 in the preliminary selection and verification of sterilization regimes for canned foods from hydrobionts, and also for the creation of an industrial autoclave control system have been given in the paper.

Development of a system for automated monitoring of microclimate parameters and an automated system for monitoring and accounting for electricity of a model facility

The Arctic is a strategically important region for Russia. In the process of searching for new solutions for the rapid construction of energy-efficient and safe buildings in the Arctic, it is necessary to develop systems for monitoring and maintaining indoor microclimate, ensuring optimal use of resources and implementing building management systems. Continuous automatic monitoring will help to increase comfort and safety in the room, as well as to reduce energy costs. The possibility of remote data transmission will allow you quickly respond to emergency situations and take actions to prevent the development of accidents. Employees and students of the Department of Automation and Computer Engineering of the Murmansk State Technical University have carried out the development and testing of a software and hardware complex based on a model object on the University territory. At the first stage, a group of researchers has developed a system for automated monitoring of microclimate parameters and an automated system for electric energy metering. The paper presents a detailed description of the functionality of the developed hardware and software modules; it describes the concept of an automated building management system, which is currently the next stage in the development of the system.
